granola

so, a while ago i stumbled upon this recipe for granola. this recipe is soooo good that i really had to convince brian that I in fact made it. it is so good that we don't just eat it for breakfast (with yogurt) but also for dessert too. I think that if we're going to continue eating it like it's going out of style, I just might have to tweak the recipe slightly to make it a smidge more healthy. or not. cause it's sooooo good. oh, and easy. here's the recipe:

6 cups oats
3/4 cup honey
1/2 cup canola oil
1/2 tsp salt
1-2 Tbs cinnamon
2 Tbs vanilla
1 cup coconut
1 cup craisins or raisins (we do craisins)
1/2 cup brown sugar
1/2 cup chopped nuts (both almonds and pecans are yummy)
1/2 cup flax seed (if you want to make it healthier)

all you have to do is throw it all in a big bowl. mix it really good. spray a cookie sheet and bake it on 375 for 10-15 minutes. I do 10 minutes because i like it chewy. and it's that easy.

my conversation with finley

this morning i heard finley playing in our closet so i opened the door.

me: what are you doing in here?
finley: i'm pooping mommy.
me: okay, lets go change your diaper.
finley: no. just pee. just pee.
me: hmmmm. what's that smell then?

as we're walking to her room.

finley: {laughing hysterically} i'm tricking you. i'm tricking you! my poop so tiny. my poop so hard. {more laughing}

seriously, i couldn't come up with this stuff if i tried. such a silly little trickster.

our first project

I just sat down to upload some pictures from the last few weeks, but something went wrong and the pictures got lost. I can't find them anywhere, and they automatically delete from my camera. I've made it this far in my pregnancy without shedding a single hormonal tear, but that's all it took. There were some really cute ones!!! I'm hoping my computer savvy husband can work a miracle! So since those pics are gone, I thought I'd post a picture of one of our first home projects, and give my amazing husband a shout out!!
This area is in the hallway between the kitchen/dining room, finley's room, and the stairway to the downstairs. It used to have upper cabinets and then just an empty space below. Naturally, the space below became an area where we piled up junk. It wasn't working and it certainly wasn't cute, so we put in some lower cabinets and upper shelving and now we have a space that is so amazing. Seriously, this little space has become a lifesaver. It has our computer, mail and bill organizer, decorating stuff, extra kitchen appliances, finley's coloring stuff. you name it. and if we ever have a big party we can clear it off and use it as a buffet for serving since it's right off the dining room. i love it and i LOVE my husband for improving our house one project at a time!

**i'm hoping this post will help brian feel extra loved and appreciated as he is on the last stretch of painting our upstairs and feeling a smidge "over" these projects.

one of my favorite mommy blogs

When we were remodeling our kitchen i somehow stumbled upon this kitchen re-do. I got hooked and spent a ridiculous amount of time looking through her blog. She is a REALLY cute mom of 7 REALLY cute little kids. Yeah you read that right. 7! She is a Christian and writes all about her faith and mommyhood, and I think you should get hooked on it too. resolved2worship

hopefully you have some fun activities planned for the long weekend. us? we (and by "we", i mean brian) are planning on knocking some items off our long list of household projects. our house has come a LONG way since we moved in, but for the sake of making our space more efficient, beautiful, and up-to date we have a way to go still. here is the master list that's been hanging our on fridge.

-install and paint new trim for upstairs
-paint upstairs living area and bathroom
-install new bathroom floor upstairs
-install tile floor in slop room
-paint the entire downstairs (this has been done twice, we just suck at choosing colors)
-downstairs renovation (taking out a wall between two small rooms and making one big room)
-paint new upstairs doors
-install new carpet downstairs (this has been done twice as well. stupid floods! still saving for this project :)
-install bead board in finley's room and repaint
-repaint and repurpose new big girl furniture for finley's room
-paint, decorate, etc the baby's room (after we know what we're having)

so there it is.

oh, and here's a question. toddler bed or big girl twin bed? i have my old headboard that fits a twin that will be super cute after i paint and recover the fabric, but i just can't picture my little lady in such a big bed. i go back and forth every day, so please offer some wisdom.
